In order to solve technological problems for the meat-processing industry in the current very difficult economic situation in the country, the company "Trade House" Technology Trade" together with a partner - world leader in production animal Proteins "Scanflavour" (Denmark) held another practical seminar in Denmark and Norway.
The theoretical part of the seminar was opened by the sales director of "Scanflavour" company Heini Ostergard, who presented the structure of the company and presented the scheme of animal proteins production. Special attention in the report was paid to the new developments of the Company "Scanflavour":
· - protein "Scan Gel DI-95" - is intended for meat injection with the purpose of selling it in the form of semi-manufactures, as well as cooked-smoked pork, beef, poultry products;
· - protein "Scan Gel DI-93" - is intended for the production of granules in a cold way in the proportion of 1:8 with subsequent use of them in the production of semi-smoked and uncooked smoked sausages.
Low-functional proteins "Scan gel SF-91" and "Scan gel SF-95" were noted. They have high thermo-stability, and give the final product fibrous, meat structure. These advantages are especially relevant in the production of inexpensive segment of cooked sausages, semi-smoked sausages.
An excursion to the third line of the plant under construction was organized for the participants of the seminar. Ultramodern technology of production of proteins "Anote" will be introduced on that plant. These proteins will be declared not as collagen, but as aromas, as well as other innovative proteins that will make a revolution in the world of ingredients for the food industry. The company "Scanflavour" plans to release the first batch of such products already in the end of 2015.
The practical part of the seminar was presented by the technologist of the "Scanflavour" company - Karsten Doctor. In the experimental workshop two kinds of granules, imitation fat, several kinds of cooked sausages, semi-smoked sausages, sausages and smoked meats were produced.
All participants of the seminar could attend a tasting of products made by specialists of "Scanflavour" company using animal proteins. In total 30 kinds of sausages were presented at the tasting. All products have been highly appreciated by the participants of the seminar. Each product received more than 4 points on a 5-point scale.
During the breaks between classes the participants of the seminar could enjoy the amazing beauties of the unique nature of Norway. While walking on a boat and a train guests plunged into the mysterious world of waterfalls, had the opportunity to penetrate the Viking spirit.
Summing up the next practical seminar, it should be noted that the company "Trade House" Technology Trade" together with Danish partners have achieved the set goals:
presented the participants with new types of products, developed technological solutions for the work of enterprises in the context of economic crisis, and created a favorable atmosphere for communication.
