The event took place in the cozy town of Ghent and was held under the motto "Innovative solutions in meat-processing in the conditions of deficit
of raw materials and economic crisis".
The technological part of the seminar was divided into three blocks, in the first of which cooked products of economy class and middle price segment were presented. A premium was put on multi-functional products like Pellimix VB2, which combine a good price, thermo-stability and functionality 1:40. Flavor-aromatic mixes such as Flavour meat booster, Flavour PR, Flavour S500 were also presented. All these ingredients create a pleasant shade of meat flavors, especially in economy class products. Attention was paid to the complex mixtures with traditional tastes: Pellikombi Lubitelska Lux, Pellikombi Mortadella 01, Pellikombi FL, Pellicombi RUS (Russian), Pellikombi Sosiski R. All these products have earned a proper assessment of technologists.
The second block of the seminar was presented with semi-smoked and cooked smoked products, where Ukrainian and Belgian trends of tastes were traditionally disclosed. The products made of pork heads and low-value meat raw materials attracted special attention. In this segment the seminar participants highly appreciated Pellikombi KR, Pellikombi AR HOT, Pellicombi AR11, Flavour Salami, Flavour S500 and Flavour meat booster.
In the third block traditional products for Belgium were presented - pates and new flavour trends in the production of uncooked smoked sausages with Italian taste notes. The seminar participants paid special attention to the pates of economy class, in which broth and vegetable oil were up to 60%. In the group of uncooked smoked sausages products named Fuet Felino and Madera were especially noted. They perfectly combine the taste and aroma of madeira, truffles and porcini mushrooms.
At the end of the seminar, products ready-to-cook with a high degree of preparedness were presented, as well as a series of products in marinades, where poultry and pork with original ingredients marinade Paprika S, Mexico and Florida were widely used. All participants at the appropriate level appreciated the recipes and new ideas offered by technologists of "Trade House" Technology Trade" and TM Solina.
In addition to productive work, tastings and presentations, guests had the opportunity to spend their free time in such beautiful cities of Belgium as Ghent, Bruges, Aalst. Visiting the beautiful castle "Gravenstin", the majestic Cathedral and the Belfry in Ghent left incredible impressions. Brussels particularly surprised us by its modern sculptures, imposing squares and breathtaking architecture.
